Just wanted to drop a line and give an update. I’ve been taking small steps toward being better for a while now and this food venture seems to be a healthy route. Also been acting on impulses to show kindness and spread the smiles. Hoping that this website helps inspire people to try some of these amazing dishes! Potential smiles that I cannot even quantify! That right there makes me smile!! Going to start putting more effort into this and come at you with some great food! I’m just under two months away from finalizing my divorce and have been going to a counselor regularly. Taking steps I should have taken years ago. Just like learning to cook. Not sure what the future is going to be like but at least I know there will be excellent food! Had a rough day yesterday and had to leave work early due to my mental well being. I had planned on making two dishes and I put my focus on those to help pull me out of my funk. Took me a little while to find all the ingredients (only had to go to two stores) and I kinda went into it with a plan. More smiles for me getting more comfortable with the process!! One of my goals is to be better with preparing a complete meal. I had put together these Spicy Sausage Sandwiches and a Scalloped Tomato dish I came across. For the sandwiches I had to make fresh salsa so I cut up fresh sweet red pepper, a sweet onion, banana pepper and fresh cilantro. Mix all that up and refrigerate until the end! I made them with mild sausage and omitted the jalepenos so it really wasn’t all that spicy but next time I’m bringing the heat! I’ll make it a point to get the recipe up on here because it tasted great! This new interest of mine is paying off in more and more ways all the time. I spent about 5 minutes looking through a few cookbooks and I found about 15 things I want to make. Let’s have some fun and eat some awesome food!! Thank you to anyone reading this! This is a great launchpad for my spirit and I’m hoping an avenue to spread the love!
